History and Terroir
The Paolo Scavino estate was founded in 1921. Now over a century into the Barolo-making game, this revered Castiglione Falletto-based estate continues to set the standard for complex, ageworthy Nebbiolo around the globe. Lorenzo and Paolo Scavino established the winery back in 1921, driven by a passion for farming and regional tradition. Today, the estate is spearheaded by Paolo’s grandson, Enrico, as well as his daughters, Enrico and Elisa, who represent the fourth generation at the family estate. Their meticulous work mirrors the values that the estate was originally founded upon: detailed farming, respect for the land, and love for their Italian culture.
Farming and Winemaking
At Paolo Scavino, site-specific farming has always been at the helm of the estate, with an emphasis on showcasing each individual cru as its own masterpiece. In the cellar, each wine is vinified by parcel, with the estate’s top sites including Monvigliero, Cannubi, and Rocche Annunziata. In 2007, Enrico also designed a Barolo-specific vinification vessel, so as to refine the process of extracting Nebbiolo. Winemaking techniques have continued to evolve with each generation, though an emphasis on fruit purity and site specification have always remained. All wines are fermented with native yeasts in steel, macerated for 8-12 days (reds), and aged in a combination of neutral French oak, large-format oak casks, and stainless steel. New oak percentages have been reduced to around 15%, and up to 30% of the fruit harvested from the estate’s 29 hectares are sold off in bulk, so as to maintain the family’s high quality standards.
