History and Terroir
Domaine William Fèvre stands as a pillar of excellence in Chablis, with a rich history that took a transformative turn in 1959 when William Fèvre assumed leadership, redefining the estate's focus and elevating its reputation. Since 1998, Estate Director and Winemaker Didier Séguier has been at the helm, instilling a modern precision and tension in the wines that have become synonymous with the domaine. The estate's vineyards span 70 hectares, encompassing 90 distinct parcels rooted in Chablis’ iconic Kimmeridgian and marl-limestone soils. This includes 15.9 hectares in classified premiers crus and 15.2 hectares in classified grands crus, reflecting the estate's dedication to producing site-specific wines of exceptional quality. Committed to sustainable practices, all farming is done organically, with yields carefully limited and all harvesting done by hand. The estate has been HVE (High Environmental Value) certified since 2015 and achieved organic certification in 2023.
Farming and Winemaking
In the cellar, the focus is on preserving the wines’ refreshing acidity, expressive character, and distinct minerality. This is achieved through the use of old barrels, averaging four to six years in age, rather than new oak. The result is a portfolio of complex, precise wines that embody the unique terroir of Chablis, contributing to its status as a world-renowned wine region.
