History and Terroir
Spearheaded by German winemaker Dominik Huber, Terroir al Limit is centered around the discovery and understanding of Priorat, particularly with regards to its vast potential for producing sophisticated, terroir-driven wines that rival some of the best from Europe’s most prestigious regions. The project was originally founded in 2001 by Huber and longtime friend Eben Sadie (South African oenologist / winemaker), though has been operated solely by Dominik in his Torroja del Priorat-based wine cellar since 2012. Dominik has spent the last 20+ years scouring the rugged vineyard sites of northern Spain, seeking out top-tier sites perfect for growing grapes. All vineyard plots are farmed responsibly and sustainably, with soil health always placed first. He focuses his efforts on maintaining moisture, so as to reduce the stress of the vines during warm weather seasons.
Farming and Winemaking
In the cellar, Dominik infuses his wines rather than extracting them, as he’s found that rising temperatures have quickly accelerated ripening. He vinifies both his whites and reds with whole clusters and avoids punchdowns and pumpovers, so as to keep the wines as fresh and light on their feet as possible. Dominik has also stopped using oak altogether, and instead, favors concrete for aging. All wines are vinified with no additives and as little intervention as possible. Through his efforts at Terroir al Limit, Dominik has greatly changed the perception of Priorat wines. Once deemed heavy and dense, these ethereal, personality-driven wines are a breath of fresh air for this sun-drenched Spanish region, and their emphasis on terroir reflection could be compared to the great domaines of Burgundy. In short, for serious red wine collectors, these wines are simply unmissable.
